Czech Yeast Blueberry Cake With Crumble Topping

If you are looking for the taste of the Czech summer holidays then you have to try the Yeast Blueberry Cake With Crumble Topping. In summer Czech woods are full of blueberries. Going to the forest to pick blueberries is not history it is still part of the current Czech culture. It is def worth spending few hours curving your back and picking the tiny fruits.

Are you asking me: What do people do with all those blueberries? Actually, delicious stuff. They make jam. They cook yeast dumplings with sugar and cinnamon which swim in butter. They conserve blueberries in the rum. They make pancakes with blueberry sauce and whipped cream. They bake hundreds of types of blueberry cakes.

So, try this one. Really tasty and pretty easy to bake…

RECIPE

You need to start with 30 g fresh yeast. Put the yeast into the bowl. Add one teaspoon of sugar and mix well using fork. In a while it will be quite runny and it is exactly what you need. Sprickle this mixture with one tablespoon of flour and pour 100 ml of lukewarm milk. Wait few minutes untill the yeast forms a spongy texture.

In the separate bowl mix 500 g flour, one pinch of salt and 200 g sugar. Add the yeast mixture you have prepared, 400 ml lukewarm milk, two whole eggs and 100 g lukewarm melted butter. Mix all ingredients. The dough is quite runny and it is exactly how it should be. Cover the bowl with clean tea towel. Leave the dough to rise for at least one hour. It should double its size.

Place a sheet of a parchment paper into a baking tray (approx. 41 x 35 cm). Not only on the bottom but make sure that the sheet covers also the sides.  Now stir the dough and pour it into the tray. Leave it rise for another 30 minutes.

Prepare the crumble topping. Use flour, cold butter and powder sugar. Put all these ingredients into the bowl and rub the butter into the flour using your fingertips to make light breadcrum texture.

Preheat the oven to 180 degrees Celsius.

Sprinkle the blueberries all over the dough. The dough should be covered by fruits completely. Now sprinkle the crumble topping all over the fruits.

Bake the cake for 10 minutes and then changs the temperature to 160 degrees Celsius. Bake for another 30 minutes. Take the cake out of the oven and leave it cool. Eat it like that or with vanilla icecre

Dough

  • 30 g fresh yeast
  • 1 teaspoon sugar
  • 1 tablespoon all purpose flour for the yeast
  • 100 ml lukewarm milk for the yeast
  • 500 g all purpose flour
  • 1 pinch salt
  • 200 g sugar
  • 400 ml lukewarm milk
  • 2 whole eggs
  • 100 g lukewarm melted butter

Fruit

  • 500 g fresh blueberries could be even more then you have to cover the dough completely (more fruit / more juicy)

Crumble Topping

  • 80 g butter
  • 80 g sugar
  • 110 g flour If baking in the Czech Rep. use "Hruba mouka" type of flour.
