Poppy Seeds – Lemon Cake With Lemon Icing

Once upon a time poppy seeds fall in love with lemon…and this fantastic fluffy and moist cake was created. Taste of poppy seeds and lemon is perfectly balanced and it is so easy to prepare. Original recipe could be found in a cook book written by amazing Dita P. and is called Deník Dity P. Kuchařka 2 (Only in Czech Language). Just bake it :-)

Put flour, baking powder, salt, poppy seeds and lemon zest into one bowl and mix all ingredients well. Put the butter which has to be at room temperature into bigger bowl. Add sugar and  beat it with butter until you have light and fluffy cream. It can take a while if you do not use a mixer.

Now it is time to add eggs one at a time. Mix well until smooth and add flour mixture gradually. Finally add jogurt and milk.

Preheat the oven to 170 degrees Celsius. Butter the loaf pan (this amount of batter works well with both 30 x 11 x 7 cm and 23 x 13 x 9 cm) and put the baking sheet on the bottom of the pan. Pour the batter into your prepared loaf pan and bake for approximately 45 – 60 minutes. Test the cake with toothpick and when it comes out clean, the cake is done. Let it cool down a bit and remove the cake from the pan carefully.

While the cake is cooling down you can prepare the icing. You just mix powder sugar, lemon peel and lemon juice well. Add butter and heat the icing till the butter is melted. Leave it cool down and mix it again before you pour it on the cake. The cake should be cold when you pour the icing.

Ingredients
  

  • 190 g flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 4 tablespoons poppy seeds
  • 2 tablespoons grated lemon zest organic lemon
  • 190 g butter at room temperature
  • 190 g white sugar
  • 4 eggs size M
  • 25 ml whole milk
  • 80 g whole fat yogurt could be Greek yogurt

ICING

  • 195 g powder sugar
  • 60 ml lemon juice
  • grated lemon zest from 1 whole lemon organic lemon
  • 1 teaspoon butter
