P\u0159ipravit si polentu a k tomu je\u0161t\u011b caponatu mi p\u0159i\u0161lo jako skv\u011blej n\u00e1pad.\u00a0Vy\u0161lo to, chutn\u00e1 to b\u00e1je\u010dn\u011b.<\/p>\n<p>V italsk\u00e9 kuchyni nejsem nov\u00e1\u010dek ani jako kucha\u0159ka a u\u017e v\u016fbec ne jako str\u00e1vn\u00edk, ale caponatu jsem zat\u00edm v\u017edycky jedla jenom zava\u0159enou ze skleni\u010dky. Chutnala poka\u017ed\u00e9 skv\u011ble. J\u00e1 si ale r\u00e1da p\u0159ipravuju j\u00eddlo doma, no pak taky p\u0159esn\u011b v\u00edm, co tam d\u00e1m, \u017ee jo. Recept na caponatu, jeden z mili\u00f3nu, jsem na\u0161la v moj\u00ed bibli italsk\u00e9ho va\u0159en\u00ed, v Silver Spoon (u\u017e zase moje obl\u00edben\u00e9 nakladatelstv\u00ed Phaidon). Recept jsem si trochu upravila, ale z\u00e1kladn\u00ed finty jsem dodr\u017eela. Lilek jsem p\u0159ipravovala zvl\u00e1\u0161\u0165, p\u0159idala jsem rozinky, kapary i olivy a raj\u010data jsem \u0159\u00e1dn\u011b sva\u0159ila.<\/p>\n<p>S moj\u00ed kamar\u00e1dkou Andreou a jej\u00edma dv\u011bma u\u017easn\u00fdma d\u011btma se sch\u00e1z\u00edme n\u011bkdy na h\u0159i\u0161ti, ale neprob\u00edr\u00e1me po\u010das\u00ed, ani jin\u00e9 matky a dokonce ani posledn\u00ed trendy v d\u011btsk\u00fdm oble\u010den\u00ed. Cel\u00e9 odpoledne nad t\u011bma b\u00e1bovi\u010dkama z p\u00edsku obrazn\u011b va\u0159\u00edme, pe\u010deme, ochucujeme a dochucujeme. Snad t\u0159eba ka\u017ed\u00e1 caponata prozrad\u00ed n\u011bco o tom, kdo ji va\u0159il. Andrejky byla sladk\u00e1 a ta moje do kysela.<\/p>\n<p>O polent\u011b bych mohla snad napsat knihu. Nejsp\u00ed\u0161 by se jmenovala Jak zkazit polentu na 1000+1 zp\u016fsob\u016f. Dlouho dobu se toti\u017e polenta pod m\u00fdma rukama m\u011bnila na n\u011bco nepopsateln\u00e9ho a nepo\u017eivateln\u00e9ho. Ale j\u00e1 se snadno ned\u00e1m odradit, tak\u017ee m\u016fj 1002. pokus se zda\u0159il a da\u0159\u00ed se i nad\u00e1le a j\u00e1 si polentu m\u016f\u017eu vychutn\u00e1vat i doma. Inspirovala jsem se v m\u00e9 obl\u00edben\u00e9 kucha\u0159ce <a href=\"https:\/\/www.amazon.de\/Vegetarisch-gut-gekocht-vegetarische-Grundkochbuch\/dp\/3440132366\">Vegetarisch gut gekocht<\/a>. Kdy\u017e do t\u00e9hle kucha\u0159ky nakoukne maso\u017eravec jako j\u00e1, snadno pochop\u00ed, \u017ee vegetari\u00e1ni nemaj\u00ed v\u016fbec nudn\u00fd \u017eivot.<\/p>\n<p>CAPONATA<\/p>\n<p>Na caponatu nakr\u00e1j\u00edm lilky na nudli\u010dky a ope\u010du je do sv\u011btle hn\u011bda na p\u00e1nvi na st\u0159edn\u00ed teplot\u011b, na kter\u00e9 si p\u0159edt\u00edm zah\u0159eju dv\u011b l\u017e\u00edce olivov\u00e9ho oleje. Na druh\u00e9 p\u00e1nvi za\u010dnu tak\u00e9 na olivov\u00e9m oleji op\u00e9kat na m\u00edrn\u00e9 a\u017e st\u0159edn\u00ed teplot\u011b cibuli. Cibule by m\u011bla zm\u011bknout ale ne zhn\u011bdnout, tak\u017ee to chv\u00edli potrv\u00e1, tak 10 &#8211; 15 minut. Pak p\u0159id\u00e1m raj\u010datovou passatu s kousky raj\u010dat a pomalu raj\u010data sva\u0159uju a redukuju. Ur\u010dit\u011b to trv\u00e1 minim\u00e1ln\u011b 40 minut, klidn\u011b i 60 minut. Kdy\u017e jsou raj\u010data u\u017e p\u011bkn\u011b redukovan\u00e1, p\u0159id\u00e1m rozinky, piniov\u00e9 o\u0159\u00ed\u0161ky, kapary, olivy, ocet, cukr, s\u016fl a pep\u0159. A nakonec p\u0159im\u00edch\u00e1m ope\u010den\u00e9 lilky. Zak\u00e1pnu olivov\u00fdm olejem a ozdob\u00edm \u010derstvou bazalkou. Hotovo. Pod\u00e1v\u00e1m rovnou horkou nebo pokojov\u00e9 teploty.<\/p>\n<p>POLENTA<\/p>\n<p>Ve vy\u0161\u0161\u00edm hrnci p\u0159ivedu 800ml osolen\u00e9 vody k varu a nasypu do n\u00ed polentu. Te\u010f pozor, polenta za\u010dne prskat. St\u00e1hnu teplotu na velmi m\u00edrnou a m\u00edch\u00e1m a va\u0159\u00edm 40 minut. P\u0159iprav\u00edm si m\u00e1slo a l\u00edste\u010dky \u010derstv\u00e9ho tymi\u00e1nu na ochucen\u00ed jedn\u00e9 \u010d\u00e1sti polenty a m\u00e1slo a s\u00fdr na pokr\u00e1jen\u00fd na kosti\u010dky na druhou polovinu. Po 40 minut\u00e1ch si polentu rozd\u011bl\u00edm na dv\u011b p\u016flky a do jedn\u00e9 vm\u00edch\u00e1m m\u00e1slo a tymi\u00e1n a do druh\u00e9 s\u00fdr a m\u00e1slo. Pak d\u00e1m ob\u011b polenty do silikonov\u00e9 formy na chleb\u00ed\u010dek a polentu tam hezky uhlad\u00edm. Te\u010f by polenta m\u011bla zatuhnout aspo\u0148 4 hodiny nebo i v lednici p\u0159es noc. P\u0159ed pod\u00e1v\u00e1n\u00edm ji vynd\u00e1m z formy, nakr\u00e1j\u00edm na pl\u00e1tky a na p\u00e1nvi s olivov\u00fdm olejem p\u0159i st\u0159edn\u00ed teplot\u011b ope\u0159u do zlatava a k\u0159upava. Trv\u00e1 to chvilku.
